A warm and delicious treat, the pears in these strudel rolls melt into the soft brie and create flavor and texture that thrills and delights. An excellent vegetarian option when entertaining.

Winter Pear Strudel Rolls Recipe

  • 2 Pears, peeled and chopped
  • 1 Cup Apple Juice
  • 3 Tablespoons Maple Syrup
  • 1/4 Teaspoon Fresh Thyme
  • 1/2 Cup Pecans, finely chopped
  • 1/3 Cup Dried Cherries, finely snipped or chopped
  • 2 Tablespoons Packed Brown Sugar
  • 1/2 Teaspoon Pumpkin Pie Spice
  • 15 Sheets Phyllo Dough, thawed
  • 1/2 Cup Butter or Margarine, melted
  • 4 oz Brie Cheese, thinly sliced


  1. Preheat oven to 400?F and line a baking sheet with parchment paper
  2. In a small saucepan, over medium-high heat, combine pears, apple juice, maples syrup and thyme. Bring to a boil and reduce heat. Simmer, uncovered, for five minutes or until pears are tender.
  3. Drain pears and discard liquid. In a medium bowl, combine pears, nuts and cherries. Add brown sugar and pumpkin pie spice. Toss gently until everything is combined.
  4. Unroll the phyllo dough. Lay one sheet on a clean, dry work surface and brush with melted butter before topping with a new phyllo sheet. Continue until you have a stack of five phyllo sheets, each brushed with butter. Cut in half lengthwise, then cut vertically three times so that you have six squares.
  5. Repeat until you have 18 phyllo squares.
  6. Take one square and place a thin slice of Brie near the bottom. Spoon 1 Tablespoon of the pear filling onto the slice of Brie.
  7. Fold sides and bottom over filling, then roll it up into a small package similar to an egg roll. Place on baking sheet. Repeat with the rest of the squares and filling to make 17 more.
  8. Bake for 13-15 minutes or until rolls are golden brown. Cool on a wire rack until warm and serve.
