Wheat berries and edamame are highly nutritious and fun salad ingredients! Be sure that you soak your wheat berries over night to ensure that they are soft and tender in your salad.

Wheat Berry and Edamame Salad Recipe

Total Time: 10 hours

Ingredients

  • 1 Cup Wheat Berries
  • 1/2 Cup Orange Juice
  • 3 Tablespoons White Wine Vinegar
  • 2 Tablespoons Peanut Oil
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Sesame Oil
  • 1 Teaspoon Prepared Mustard
  • 2 Cups Shelled Edamame
  • 2 Oranges, peeled and segmented
  • 1 Cucumber, peeled and diced
  • 4 Scallions, trimmed and chopped
  • 1 Head Bibb Lettuce
  • 1/2 Cup Unsalted Peanuts, coarsely chopped

Instructions

  1. Soak wheat berries in 4 cups of water overnight.
  2. Drain wheat berries and add to a sauce pan with four fresh cups of water and bring to a boil. Reduce heat and simmer for 45 minutes or until tender. Drain and set aside.
  3. In a small bowl, whisk together orange juice, vinegar, peanut oil, soy sauce, sesame oil and mustard.
  4. In a large bowl, combine wheat berries, orange segments, edamame, cucumber and scallions. Pour dressing over the top, cover and chill for 1 hour.
  5. Serve well before serving and spoon wheat berry and edamame mixture over the lettuce and top with chopped peanuts
