Smooth Avocado-Chipotle Bisque Recipe

Ingredients

  • 2 Avocados, pitted, peeled and diced
  • 1/4 Cup Lime Juice
  • 1 Tablespoon Olive Oil
  • 1 1/2 Teaspoon Fresh Rosemary, minced
  • 1/2 Teaspoon Chipotle Powder
  • 1/2 Cup Cherry Tomatoes, diced
  • 1/2 Cup Yellow or Orange Bell Pepper, diced
  • Salt to Taste

Instructions

  1. In a blender or food processor, combine the avocado, lime juice, olive oil, rosemary, chipotle powder and 3 1/2 cups water. Puree until smooth.
  2. Divide among four bowls and top each bowl with an equal amount of tomatoes and bell pepper.
