The key to this salad is using all the different colors of bell peppers in your salad. The combination of green, yellow, orange and red gives the dish a festive and bright look.

Pepper Salad Recipe

  • 4 Bell Peppers, 1 of each color, thinly sliced into strips
  • 2 Tablespoons Lemon Juice
  • 1 Tablespoon Honey
  • 1 Tablespoon Garlic, minced
  • 1/2 Teaspoon Basil, minced
  • 1/2 Cup Olive Oil
  • Pinch of Salt and Pepper
  • Monterey Jack Cheese (opt.)


  1. Add the pepper strips to a serving bowl.
  2. In a blender, combine lemon juice, honey, garlic, and basil. Pulse to combine and slowly stream the olive oil into the mix to create an emulsion.
  3. Add salt and pepper to taste.
  4. Drizzle the dressing over the pepper strips and toss gently to combine; make sure that all pepper strips are will coated.
  5. Serve on chilled plates and top with cheese if desired.
