Melted tomatoes make an excellent side dish and are quick and easy to make. Pair them up with tofu steaks for a sensational meal! You can use fresh, garden tomatoes or re-hydrated dried tomatoes if you’re looking for some bright summer flavors in the dark of winter!

Melted Tomatoes Recipe

Prep Time: 20 minutes

Cook Time: 1 hour, 30 minutes

Total Time: 2 hours, 5 minutes

Ingredients

  • 2 lb. Medium Tomatoes, chopped (about 7 cups)
  • 3 Tablespoons Olive Oil
  • 1/4 Cup Fresh Basil, snipped
  • Pinch of Salt and Pepper

Instructions

  1. Preheat oven to 300?F.
  2. In a 3 quart baking dish line the tomatoes in an even layer. Drizzle with olive oil then sprinkle with basil, salt and pepper.
  3. Bake for 1 1/2- 2 hours. Cool 15 minutes.

Notes

If planning to use re-hydrated tomatoes, be sure to soak the dried tomatoes in a bowl of water over-night so that they are fully rehydrated before cooking!
