These three flavors of lemon ice are sure to be an instant summer classic. They essentially create popsicles out of the summer treat of lemonade!

Lemon Ice Recipe

Cook Time: 10 minutes

Total Time: 3 hours, 20 minutes

Ingredients

  • Lemon Ice
  • 2 1/4 Cups Water
  • 1 Cup Lemon Juice
  • 1 Cup Sugar
  • 2 Tablespoons Vodka (opt.)
  • 1/4 Teaspoon Salt
  • Lemon-Lime
  • 2 1/4 Cups Water
  • 1/2 Cup Lemon Juice
  • 1/2 Cup Lime Juice
  • 1 Cup Sugar
  • 2 Tablespoons Vodka (opt.)
  • 1/4 Teaspoon Salt
  • Minted
  • 2 1/4 Cups Water
  • 1 Cup Lemon Juice
  • 1 Cup Sugar
  • 2 Tablespoons Vodka (opt.)
  • 1/4 Teaspoon Salt
  • 1/2 Cup Fresh Mint
  • Lavender
  • 2 1/4 Cups Water
  • 1 Cup Lemon Juice
  • 1 Cup Sugar
  • 2 Tablespoons Vodka (opt.)
  • 1/4 Teaspoon Salt
  • 2 1/2 Teaspoons Lavender

Instructions

  1. For Lemon and Lemon-Lime Ice:
  2. Combine all the ingredients together in a bowl and whisk until sugar is completely dissolved. Pour into ice cube trays and freeze for 3 hours.
  3. Put a medium bowl in the freezer.
  4. Take out the ice cubes and in two batches pulse them in a food processor until no large chunks are present and the ice is fluffy. Transfer to the chilled bowl and freeze for another hour.
  5. Scoop into bowls and serve!
  6. For the Lemon-Mint and Lemon-Lavender:
  7. Bring one cup of the water, the lemon juice, and the sugar to a boil over medium-high heat, stirring constantly. Turn off the heat and add the mint or lavender and let steep for five minutes. Strain, then add the remaining ingredients and pour into ice cube trays. Freeze for 3 hours.
  8. Put a medium bowl in the freezer.
  9. Take out the ice cubes and in two batches pulse them in a food processor until no large chunks are present and the ice is fluffy. Transfer to the chilled bowl and freeze for another hour.
  10. Scoop into bowls and serve!
