Gingered Carrot Soup Recipe

  • 3 Teaspoons Garlic, minced
  • 1/4 Cup Shallots
  • 6 Tablespoons Butter
  • 1/4 Cup Fresh Ginger, grated
  • 2 Tablespoons Orange Zest
  • 2 Lbs. Carrots, chopped or sliced
  • 3 Large Russet Potatoes
  • 6 Cups Vegetable Broth
  • 1 Cup Orange Juice
  • Pinch of Salt and Pepper
  • Dash of Tabasco
  • Plain Yogurt, (opt. garnish)


  1. Heat the butter in a medium pan over medium heat until melted. Add the shallots and garlic and saute until translucent.
  2. In a blender or food processor, puree the garlic and shallots together with the ginger, orange zest and half of the orange juice.
  3. Add the mixture to a slow cooker together with the remaining orange juice, vegetable stock, potatoes and carrots. Cover and cook on high heat for four hours or low heat for six hours.
  4. In batches, puree the vegetables until smooth, then add the salt, pepper and tabasco.
  5. Ladle into bowls and top with a dollop of sour cream.
