This goat cheese and fig combination is a perfectly quick and elegant starter. The tang of the goat cheese with the sweetness of the figs will have people coming back for more.

Cheesy Fig Conserve Recipe

Ingredients

  • 8 Dried Figs
  • 1 Tablespoon Butter
  • 1 Sweet Onion, thinly sliced
  • 1 Teaspoon Fresh Thyme
  • 1 Tablespoon Balsamic Vinegar
  • 6oz Soft Goat Cheese, softened

Instructions

  1. Remove the stems from the figs and halve or quarter them. Place in a saucepan, cover with water and bring to a boil. Reduce heat and simmer for five minutes, covered, then drain and cool.
  2. In a medium skillet melt the butter over medium heat then add the onion and cook until browned. Stir in the figs and thyme, then cook another 2 minutes or until the figs are softened. Stir in the balsamic and cook three minutes more.
  3. Mix the fix and juices into the goat cheese, spoon into a bowl and serve with crackers!
