Potato Rosti Recipe

Ingredients

  • 2 Russet Potatoes, peeled and grated
  • 4 Teaspoons Chervil, coarsely chopped
  • 4 Teaspoons Chives, coarsely chopped
  • 4 Teaspoons Parsley, coarsely chopped
  • 4 Teaspoons Tarragon, coarsely chopped
  • 2 Tablespoons Olive Oil

Instructions

  1. Squeeze the potatoes to remove as much liquid as possible then add to a bowl with toss together with the herbs. Season with salt and pepper to taste.
  2. Heat one tablespoons of the oil in a medium skillet over medium heat and press the potato mixture into the pan. Cook until the bottom is browned, then slide onto a plate. Add remaining oil, flip and cook the other side for 10-15 minutes or until golden as well.
  3. Serve and enjoy!
