This delicious salad married three sweet and tart flavors; fresh garden carrots, honey and orange juice. The combination of flavors is delicate but delicious!

Honey, Nut and Carrot Salad

  • 4 Cups Carrots, shredded and patted dry
  • 1 Cup Raisins
  • 1/2 Cup Mayonnaise
  • 1/4 Cup Honey
  • 1/2 Tablespoon Orange Juice
  • 1/4 Teaspoon Orange Zest
  • 1/2 Cup Walnuts or Pecans


  1. Preheat oven to 350?F.
  2. In a medium bowl, combine carrots and raisins.
  3. In a small bowl, mix mayonnaise, honey and orange juice. Whip with a fork until combined then stir in orange zest.
  4. Spread the walnuts or pecans out in a single layer on an ungreased cookie sheet and bake for ten minutes.
  5. Remove from the oven, cool and chop into small pieces. Add to carrots and raisins.
  6. Drizzle with dressing and refrigerate for an hour before serving.
