Zucchini Relish Recipe

  • 3 Cups Zucchini, grated
  • 1/3 Cup Cilantro, chopped
  • 1/4 Cup Fresh Lime Juice
  • 3 Tablespoons Olive Oil
  • Pinch of Salt
  • 1/2 Teaspoon Sugar


  1. Combine the zucchini, cilantro, lime, oil, salt and sugar together in a medium bowl, then pack into jars or resealable containers and refrigerate over night before serving!
