Simple, easy to make and definitely delicious for adults, you can speed the process up by making sure that the gin and champagne are chilled.
- 1/2 Cup Sugar
- 1/2 Cup Water
- 2 Tablespoons Celery Leaves, packed
- 3/4 Cup Lemon Juice
- 6oz Gin, chilled
- 1 Bottle Sparkling Wine, chilled
- Candied Lemon Rinds
- In a small saucepan combine the sugar and water then bring to a simmer and stir until the sugar is dissolved. Remove from the heat and add the celery leaves; let steep until completely cooled, then pour through a sieve and discard the leaves.
- Combine 1 tablespoon of the celery syrup, 1 tablespoon of the lemon juice, and 1/2 oz of the gin in a champagne, top with champagne, stir to combine and garnish with a lemon rind.
- Serve and enjoy!
