This springy salad, with an asian-inspired vinaigrette, offers a new twist to the springtime favorite.

 

Asian Asparagus Salad Recipe

Ingredients

  • 1 Tablespoon Rice Vinegar
  • 1 Teaspoon Red Wine Vinegar
  • 1 Teaspoon Soy Sauce
  • 1 Teaspoon Sugar
  • 1 Teaspoon Dijon Mustard
  • 2 Tablespoons Peanut Oil
  • 1 Tablespoon Sesame Oil
  • 1 1/2 lb Asparagus, trimmed and cut into 2 inch pieces
  • 1 Tablespoon Sesame Seeds

Instructions

  1. In a small bowl whisk together the vinegars, soy sauce, sugar and mustard. Drizzle in the oils while whisking to create an emulsion dressing.
  2. Lightly salt a pot of water and bring to a boil. Add the asparagus and cook for 5 minutes, then drain and rinse under cold water. Add the asparagus to a large bowl, drizzle with dressing, toss to coat then sprinkle with sesame seeds.
  3. Serve and enjoy.
