A Greek dish, stifado uses the best of spices: cinnamon, cloves and oregano. Serve this delicious dish over hot, steamy rice.
Simmering Seitan Stifado Recipe
Ingredients
- 8oz Frozen Pearl Onions
- 2 Tablespoons Olive Oil
- 1 lb. Seitan, cubed
- Salt and Pepper to taste
- 1 Red Bell Pepper, seeded and diced
- 2 Teaspoons Garlic, minced
- 1 14.5oz Can Crushed Tomatoes
- 1 Cup Vegetable Broth
- 1/4 Cup Red Wine Vinegar
- 2 Tablespoons Tomato Paste
- 1 Teaspoon Oregano
- 1 Teaspoon Cinnamon
- 1 Teaspoon Sugar
- 2 Cloves
- 1 Bay Leaf
Instructions
- Bring a medium saucepan of salted water to boiling and blanch the pearl onions for one minute. Remove from heat, drain and trim the ends.
- Bring one tablespoon of oil to smoking over medium heat in a large skillet, then add the pearl onions and cook until lightly browned; about five minutes.
- Transfer to a slow cooker.
- In the same skillet, add the remaining oil and brown the seitan on all sides;about give minutes.
- Combine all the remaining ingredients in the slow cooker, with the seitan, and cook for 6-8 hours, covered. Remove the bay leaf before serving.
- Serve and enjoy!
