  • 2 Cup Smooth Peanut Butter
  • 4oz Vegan Margarine
  • 1 Cup Dark Brown Sugar
  • 1/2 Cup Evaporated Cane Sugar
  • 2 Teaspoon Vanilla Extract
  • 1/2 Cup Soymilk
  • 3 1/2 Cups Flour
  • 2 Teaspoons Baking Soda
  • 2 Teaspoons Baking Powder
  • Pinch of Salt
  • 1/3 Cup Roasted, Unsalted Peanuts, chopped
  • 1/2 Cup Coconut Creamer
  • 8oz Vegan Chocolate Chips


  1. Preheat the oven to 350?F and line two baking sheets with parchment paper; set aside.
  2. Cream together the peanut butter, margarine, brown sugar, cane sugar and vanilla until smooth, then beat in the soymilk and 1/4 cup of water.
  3. Mix together the flour, baking soda, baking powder, salt and peanuts in a medium bowl, then add into the peanut butter mixture and mix until a dough forms.
  4. Scoop rounded tablespoons out onto the baking sheets, 2-3 inches apart, and press down with a fork making a criss-cross pattern in each.
  5. Bake for 9-11 minutes or until edges are beginning to brown. Cool.
  6. In the top half of a double boiler heat the creamer until steaming, then pour over the chocolate chips in a bowl. Let stand for 30 seconds, then mix together until melted and smooth.
  7. Spread two teaspoons of filling on half the cookies and top with the remaining cookies.
  8. Serve and enjoy!
