Pesto isn’t restricted to basil recipes. This parsley pesto has a bright fresh taste that is totally different but just as delicious!
- 1 Cup Fresh Flat-Leaf Italian Parsley, packed
- 2 Tablespoons Capers
- 1 Clove Garlic
- 1/3 Cup Pine Nuts
- 1 Tablespoon Balsamic Vinegar
- Salt and Pepper to taste
- 1/2 Cup Olive Oil
- Combine all the ingredients in a food processor or blender except for the olive oil.
- Slowly stream in the olive oil, pureeing until the mix is completely smooth. Season with salt and pepper to taste!
- Enjoy over pasta!
