Serving Size: 6

  • 2 Tablespoons Olive Oil
  • 1 Yellow Onion, chopped
  • 2 Teaspoons Garlic, minced
  • 1 Teaspoon Ginger, peeled and minced
  • 1 Teaspoon Ground Coriander
  • 1 Teaspoon Cumin
  • 1 Teaspoon Tumeric
  • 1/2 Teaspoon Ground Cardamom
  • 1/2 Teaspoon Dry Mustard
  • 1/4 Teaspoon Cayenne Pepper
  • 1/4 Teaspoon Allspice
  • 1 1/2 Cups Brown Lentils, rinsed
  • 1 15.5 oz Can Kidney Beans
  • 3 Cups Water
  • Salt and Pepper to Taste

  1. Turn your slow cooker on to high and add the oil.
  2. Puree the onion, garlic and ginger in a food processor until it resembles a paste, then add to the slow cooker. Cover and let cook for 15 minutes.
  3. Add the coriander, cumin, tumeric, cardamom, mustard, cayenne and allspice. Stir together and let cook for about 30 seconds, so the spices can infuse the oil.
  4. Turn the slow cooker down to low and add the lentils, beans and water. Cook on low for 8 hours. Season with salt and pepper to taste before serving.
  5. Serve over hot basmati rice!
