  • 2 Cups Flour
  • 1/2 Cup Unsweetened Cocoa Powder
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 1/3 +1/2 Cup Vegan Chocolate Chips, divided
  • 4 oz Vegan Margarine
  • 1/2 Cup Evaporated Cane Sugar
  • 1/2 Cup Light Brown Sugar
  • 1/3 Cup Vegetable Oil
  • 1/4 Cup Plain Soymilk
  • 1 Teaspoon Peppermint Extract
  • 1/2 Teaspoon Vanilla Extract


  1. Sift together the flour, cocoa, baking powder, baking soda and salt into a large bowl, then stir in the 1/3 cup of chocolate chips and set aside.
  2. In a large bowl cream together the margarine, cane sugar, and brown sugar, then beat in the oil, soymilk, peppermint extract and vanilla extract until smooth. Beat in the flour mixture.
  3. Roll the dough into a log and wrap in plastic wrap; refrigerate for 2 hours.
  4. Prehead oven to 350?F and line two baking sheets with parchment paper.
  5. Remove the log from the fridge and slice into 1/2 inch thick rounds. Place on the baking sheet and bake for 9-11 minutes. Cool
  6. Melt the remaining chips in the microwave on low power, then dip a fork into the melted chocolate and drizzle over the cookies.
  7. Let set, then serve and enjoy!
