Ingredients

  • 1 1/4 Cups Flour
  • 1/2 Cup Cold Butter, cubed
  • 1 Tablespoon Sugar
  • Pinch of Salt
  • 1 1/2 Pounds Sweet Cherries, pitted, stemmed and halved
  • 1/3 Cup Sugar
  • 1 Tablespoon Cornstarch
  • 1 Tablespoon Lemon Juice
  • 1/4 Teaspoon Almond Extract
  • Pinch of Salt
  • 2 Tablespoon Raw Sugar

Instructions

  1. In a food processor combine the flour, butter, tablespoon of sugar and pinch of salt. Pulse together until the mixture resembles fine crumbs. Turn the machine on and while it is running add 2 tablespoons of cold water. Turn out onto a work surface, form into a disk and chill for 1 hour.
  2. Heat the oven to 375?F and combine the cherries, 1/3 cup sugar, cornstarch, lemon juice, almond extract and salt together in a bowl. Set aside.
  3. Rolled out the chilled dough on a lightly floured surface until it makes a rough 13 inch circle. Transfer to a baking sheet lined with parchment paper and add the filling to the middle of the dough; fold over the edges to seal the filling in.
  4. Brush the crust with water and sprinkle with raw sugar, then bake for 50-55 minutes or until golden brown.
  5. Cool, then serve and enjoy!
