Pears are a winter delicacy and these are poached in a warmly spiced fruit wine and stuffed with a luxurious white chocolate and blackberry mix. The can be served warm or room temperature.

Blackberry and White Chocolate Stuffed and Poached Pears Recipe

  • 4 Pears, Bosc are ideal
  • 1 Bottle Blackberry Wine
  • 2 Cups Water
  • 1/2 Tablespoon Cinnamon or 1 Cinnamon Stick
  • 1/4 Teaspoon Whole Cloves or a pinch of Ground Cloves
  • 1/4 Cup + 3 Tablespoons Sugar
  • 1/2 Cup White Chocolate Chips
  • 1/2 Cup Blackberries


  1. In a medium sauce pan, place whole bottle of wine, water, cinnamon, cloves and 1/4 cup of the sugar. Bring to a boil.
  2. Rinse and dry blackberries. Place in a small bowl and cover with 3 Tablespoons of sugar.
  3. Fill a large bowl with water. Core the pears with a melon baller from the bottom, leaving them otherwise intact, and then peel. When finished, slip each pear into the water to prevent browning.
  4. Reduce the heat of the boiling wine mixture and add the pears. Simmer until soft, (30-45 minutes) and turn periodically to ensure all sides of the pears are covered in the wine.
  5. Remove pears from the pot once tender and set them aside to cool. Return the heat to high and let the wine mixture boil until reduced by half. Set aside to cool.
  6. Melt white chocolate chips in microwave or double boiler. Use a fork to gently mash the blackberries and add them to the melted white chocolate, stirring to combine.
  7. When pears are cool enough to handle, carefully spoon the white chocolate and blackberry mixture into them.
  8. Plate in the center of a plate and spoon cooled syrup over them. Garnish with berries.
