This spicy slow-cooker concoction is sure to be a hit. Adjust the heat to your preferences by increasing or decreasing the chili powder.

Black Bean Chili Recipe

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 Sweet Onion, chopped
  • 1 Red Bell Pepper, seeded and chopped
  • 2 Teaspoons Garlic, minced
  • 2 Tablespoons Chili Powder
  • 1 28oz Can Crushed Tomatoes
  • 2 15.5oz Cans Black Beans, drained, rinsed and drained again
  • 1 Cup Water
  • 1 4oz Can Green Chiles, drained
  • Salt and Pepper to Taste

Instructions

  1. In a large skillet over medium heat, heat the oil with the onion, bell pepper and garlic. Cook until softened, about five minutes. Stir in the chili powder and cook 30 seconds longer, then pour it into a slow cooker.
  2. Add the tomatoes, beans, water, and chiles. Cover and cook on low for 6-8 hours.
  3. Season with salt and pepper to taste before serving.
