French toast is a classic breakfast meal and this recipe makes an excellent, almost tropical, breakfast treat.

 

Vegan French Toast Recipe

Ingredients

  • 2-3 Very Ripe Bananas
  • 3/4 Cup Coconut Milk
  • 1/4 Cup Water
  • 1 1/2 Teaspoons Pumpkin Pie Spice
  • 1 Teaspoon Vanilla
  • Thick, hearty Bread

Instructions

  1. Peel and roughly chop bananas.
  2. Add bananas, coconut milk, water, pumpkin pie spice and vanilla to a food processor or blender and pulse until smooth and creamy.
  3. Pour mixture into a wide dish or bowl, such as a pie plate, and dip each piece of bread into the mixture until thoroughly coated and the mixture has soaked through.
  4. Heat a non-stick skillet or fry pan over medium-high heat on the stove and lay coated bread pieces so they are not touching.
  5. Cook 2-3 minutes on each side or until golden browned. Serve with your favorite maple syrup and vegan butter or margarine.
