These patties can be made ahead of time and kept in the refrigerator until you’re ready to cook them. Just take them out about 30 minutes before cooking so they have a chance to reach room temperature!

Ingredients

  • 2 Cups Canned Beans of Your Choice, drained with liquid reserved
  • 1 1/2 Cups Carrot, grated
  • 1 Onion, coarsely chopped
  • 1/2 Cup Rolled Oats
  • 1/4 Cup Cilantro, chopped
  • 1 Tablespoon Garlic, minced
  • 1 Tablespoon Chili Powder
  • 1 Teaspoon Salt
  • Pinch of Pepper
  • 4 Tablespoon Olive Oil
  • 4 Hamburger Buns
  • Fixings of your choice!

Instructions

  1. In a food processor, pulse together the beans, carrot, onion, oats, cilantro, garlic, chili powder, salt and pepper until combined but not pureed. Make sure the mixture holds together by pinching it; if not add a little bit of bean liquid, 1 tablespoon at a time, until mixture holds together well. Let rest for five minutes before shaping into patties.
  2. Shape into 4 patties.
  3. Heat the oil in a non-stick skillet over medium heat. Add the patties and cook 5 minutes on each side.
  4. Serve with buns and garnishes!
