  • 4 Large, Whole Tomatoes
  • 1 Avocado, peeled pitted and diced
  • 1/2 Cup Sweet Corn Kernels
  • 2 Tomatoes, diced
  • 1/4 Cup Cilantro, chopped
  • 1 Tablespoon Lemon Juice
  • Salt and Pepper to taste


  1. Take the four whole tomatoes and juice them.
  2. In a large bowl, combine the tomato juice, avocado, corn, diced tomato, cilantro, lemon juice, salt and pepper.
  3. If you would like it to be warm, heat in a saucepan over medium heat until heated through, otherwise serve cool and enjoy!
