Ingredients

  • 1 Tablespoon Dijon Mustard
  • 2 Tablespoons White Wine Vinegar
  • 4 Tablespoons Olive Oil
  • 1 Teaspoon Salt
  • Pinch of Black Pepper
  • 4 Cups Canned, Cooked Lentils, drained
  • 3 Cups Tomato, chopped
  • 1 Cup Carrot, chopped
  • 1 Cup Radish, chopped
  • 1 Cup Celery, chopped
  • 1 Cup Fennel, chopped
  • 1 Cucumber, chopped
  • 1/2 Cup Red Onion, chopped
  • 1/4 Cup Parsley, chopped

Instructions

  1. In a small bowl whisk together the dijon mustard, vinegar and olive oil. Season with salt and pepper and set aside.
  2. In a large bowl combine the lentils, tomato, carrot, radish, celery, fennel, cucumber, onion and parsley. Drizzle with dressing and toss until the salad is combined and well coated.
  3. Serve and enjoy!
