Ingredients

  • 3 Teaspoons Vegetable Oil
  • 8oz Button Mushrooms, halved
  • 2 Teaspoons Garlic, minced
  • 1 Leek, white parts only diced
  • 3 Red Potatoes, cubed
  • 2 Carrots, peeled and sliced
  • 2 Parsnips, peeled and sliced
  • 1 1/2 Teaspoon Tomato Paste
  • 1 15oz Can Crushed Tomatoes
  • 1 1/2 Cups Vegetable Broth
  • 2 Sprigs Thyme, tied together + 1 Teaspoon Thyme, chopped
  • 1/2 Cup Lager Beer
  • 4 1/2 Teaspoon Quick Cooking Tapioca
  • 1 Cup Cabbage, shredded
  • 1 Tablespoon White Miso
  • 2 Tablespoons Parsley

Instructions

  1. Heat 1 1/2 tablespoons of the oil in a large pot over medium heat then add the mushrooms and garlic and saute for 8 minutes. Remove from pan, add the remaining oil and the leek and saute for 5 minutes. Add the potatoes, carrots, parsnips and tomato paste and cook for 2 minutes, then add the tomatoes, broth and thyme sprigs and bring to a boil. Reduce heat and simmer for 40 minutes.
  2. Pour in the lager and then stir in the tapioca and mushrooms and simmer for 15 minutes or until thickened. Remove thyme sprigs and stir in chopped thyme, parsley, cabbage and miso and cook 5 minutes longer or until cabbage is softened.
  3. Serve and enjoy!
